A Dialogue with the Terroir

Every harvest is done by hand. Only the healthiest berries make it to the tank. Partial or total destemming is applied depending on the style.
Crushing, fermentation, and aging take place in stainless steel or resin tanks. Bottling is manual, without filtration, and with minimal sulfites.

Each bottle reflects the Languedoc terroir and our natural approach. Precision and care translate into liveliness and delight.

We use Castelnaudary terracotta amphorae for natural micro-oxygenation. The tannins soften, and the fruit fully expresses itself.


This is especially true for Carignan, which gains roundness and finesse.

The Art of Single-Varietal Wine

Each grape variety tells its story:

  • Cinsault: ten days of maceration, fresh red fruits, floral notes, and a hint of pepper.

  • Carignan: nearly a century old, intense fruit, and supple tannins.

  • Viognier: clay-limestone soils, offering freshness and aromatic richness.

All our still wines are handcrafted.
